Pimiento and Avocado Grilled Cheese.


  1. 1/2 c. shredded sharp Cheddar
  2. 1/4 c. jarred pimiento peppers, drained
  3. 2 tbsp. mayonnaise
  4. Salt and freshly ground black pepper
  5. 4 slices Bread
  6. Butter, for bread
  7. 1/2 avocado, slice


  1. In a small bowl, stir together cheddar, pimientos, and mayonnaise. Season with salt and black pepper.
  2. Butter bottom side of bread. Spread pimiento cheese on two slices and top with avocado.
  3. Sandwich and grill until cheese is melted and bread is golden.
